Shrove Tuesday

Within one week, we’re celebrating Chinese New Year, Shrove Tuesday and Valentine’s Day! It’s foodie heaven!
If you want a recipe for the best pancakes ever, then you’ve come to the right place! These are tried and tested and are just delicious!

When it was New Year’s Day, we invited some friends around on the morning for a hot chocolate & pancake party. We only had a recipe for English style pancakes, but knew our friend could make delicious American-style pancakes, so he ended up being our pancake chef for that morning! The recipe was his grandmother’s, and we declared it the best pancake recipe ever! I asked for it, but discovered that it was almost identical to the recipe in Nigella Lawson’s cookbook ‘How to be a domestic goddess’. Sometimes, I’m uncertain whether to share recipes online because they do really belong to the cook and sometimes it feels a bit like plagarism. However, I searched online, and Nigella has kindly put this recipe on her blog, so I feel no harm in sharing!

American-Style Pancakes

  • 225 gram(s) plain flour
  • 1 tablespoon(s) baking powder
  • 1 pinch of salt
  • 1 teaspoon(s) white sugar
  • 2 large egg(s) (beaten)
  • 30 gram(s) butter (melted and cooled)
  • 300 ml milk
  1. The easiest way to make these is to put all the ingredients into a blender and blitz. But if you do mix up the batter by hand in a bowl, make a well in the flour, baking powder, salt and sugar, beat in the eggs, melted butter and milk, and transfer to a jug: it’s much easier to pour the batter into the pan than to spoon it.
  2. Heat a smooth griddle or pan on the stove.
  3. When you cook the pancakes, all you need to remember is that when the upper side of the pancake is blistering and bubbling it’s time to cook the second side, and this needs only about 1 minute, if that.
  4. I get about 16 silver-dollar-sized pancakes out of this.

Done! How simple is that? Now all you need to decide is what toppings to have on your pancake! I love sweet syrup or nutella, but MrJ loves bacon and maple syrup!


IMG_20130101_093801If you wanted to prepare your pancake mix in advance, so that you have even less prep-time tomorrow, then Nigella has even thought of a recipe for that too!

Home-Made Instant Pancake Mix

“I find this a real life-safer. I so often have crowds of children sleeping over at the weekend, so I make a container full of this and then I just have to whisk in egg, milk and melted butter to a cupful whenever I need a breakfast’s worth of pancakes. Serve with the syrup of your choice.” – Nigella Lawson

For the pancake mix

  • 600 gram(s) plain flour
  • 3 tablespoon(s) baking powder
  • 2 teaspoon(s) bicarbonate of soda
  • 1 teaspoon(s) salt
  • 40 gram(s) caster sugar (or vanilla sugar)

For the batter – to each 150g pancake mix, add and whisk together

  • 1 medium egg(s)
  • 250 ml semi skimmed milk (or full fat)
  • 1 tablespoon(s) butter (melted)
  1. or the Pancake mix: Mix all the ingredients together and store in a jar.
  2. When ready to make the pancakes, proceed as follows: Heat a flat griddle or pan with no oil.
  3. Spoon drops of 1½-2 tablespoons of batter onto the hot griddle or into the pan and, when bubbles appear on the surface of the little pancakes, flip them over to make them golden brown on both sides. A minute or so a side should do it.
  4. Should make about 15 pancakes, each about 8cm in diameter.

I think this could be a staple in anyone’s kitchen! I know we love eating pancakes on a more regular* basis. (*’Regular’ to refer to when I cannot be bothered to make a full-on dinner, or we’ve had a lazy lie-in!)
