For the past few weeks I’ve been putting a meal plan together on Saturday and then doing an online grocery shop to click and collect on Monday as soon as I’ve dropped off my little one at nursery. It’s so satisfying that all the meals are planned and bought for by 9am at the start of the week!
Here’s what we’re going to be eating this week. What have you got on your menu?
MONDAY: Spaghetti bolognese – it’s a staple, and our family recipe for it is just perfection.
TUESDAY: Salt and pepper popcorn chicken with rice and stir-fried vegetables. This is my first time making this recipe. My cousin (another mega foodie) has recommended the Dumpling Sisters website, so I thought I’d give one of their recipes a go.
WEDNESDAY: Vegetable frittata. A great way to use up leftover veg, plus I have so many eggs! Served with a side salad, probably smothered in ranch dressing.
THURSDAY: Chicken and black bean stir fry with green vegetables (undecided what I’ll use!) and rice.
FRIDAY: Rosemary, potato and pea savoury pancakes. This is a knock-off of one of the dishes at The Pancake House in Center Parcs. After a family holiday one year, my mum said it would be so easy to make these savoury pancakes at home, so she made up her own version of them and they’re delicious!
